Our Story

Coal Pick Distillery crafts premium Kentucky Straight Wheated Bourbon with an unwavering commitment to quality and tradition. Nestled on a historic 4,000-acre farm in Paradise, Kentucky, our distillery draws from the region’s rich heritage and pristine natural resources—including limestone-filtered water that’s essential to true Kentucky bourbon. We specialize in Single Barrel and Very Small Batch expressions, aged slowly in hand-selected Coopers’ barrels to develop deep character and complexity.

Our Bourbon

Coal Pick Distillery is a craft operation producing 5,600 barrels annually, proudly rooted in the heart of Kentucky. Every drop of our bourbon is distilled using a sweet mash process in traditional pot stills, fueled by locally sourced grains. Our setup includes three pot stills running in unison, each equipped with four-plate copper columns to ensure a clean, high-quality spirit that reflects our exacting standards. With private on-site barrel storage, we control every step of the process—from grain to glass. In addition to our own brand, we offer contract distillation services for other distilleries, private investment groups, and barrel brokers. Whether it’s a custom mash bill or an industry-standard recipe, we produce bourbon with integrity, precision, and pride.

Our Rick Houses

Kentucky has traditionally used wooden rick houses for storing its bourbon. Coal Pick has taken a more modern approach by creating a steel rack storage system that allows us to load and unload bourbon in a first in first out basis while eliminating a lot of the manual handling. Our custom-designed steel rack aging system enhances airflow and consistency, bringing innovation to a time-honored craft without compromising its authenticity.
