Meet The Coaljito: Coal Pick’s Bourbon Twist On A Summer Classic
Some cocktails are made for patios, porches, and long Kentucky evenings. The Coaljito is one of them. Inspired by the classic mojito but built on Coal Pick’s wheated Kentucky bourbon instead of rum, this refreshing mint-and-lime sipper brings the farm in Paradise, Kentucky straight to your glass.
Why A Bourbon Mojito?
At Coal Pick Distillery, we love honoring tradition while quietly bending the rules. The mojito is a timeless favorite built on lime, mint, a touch of sweetness, and bubbles. Swapping in our wheated bourbon turns it into something distinctly Kentucky:
- Soft, sweet bourbon notes instead of sharp molasses rum
- Fresh mint keeps the drink light, bright, and summer-ready
- A long, smooth finish from our sweet-mash bourbon that ties it all together
The result is a cocktail that feels familiar but tastes like Coal Pick through and through.
What Makes The Coaljito Unique
Coal Pick isn’t just another distillery; it’s 4,000 acres of lakes, rolling hills, wildlife, and working farmland in historic Paradise, Kentucky. Every Coaljito starts with bourbon that is:
- Distilled, aged, and bottled on-site using a sweet mash process in traditional pot stills
- Made from locally sourced Kentucky grains that showcase the land around us
- Slowly aged in hand-selected barrels to build that rich, mellow Coal Pick character
When you muddle mint into our bourbon and top it with ice and fizz, you’re not just making a drink—you’re pouring a little bit of Paradise into the glass.
